This recipe is a a winner in our house its easy, quick and everyone will actually eat it! You can't imagine how hard it can be trying to find recipes that are quick and easy to make, by the time we are finished with school for the day and the chores have been done around the house, I am beat and don't usually have much energy to spend on dinner, but I still want my family to eat as healthy as possible. Also trying to make something for dinner that 8 people will eat can sometimes be harder than you would think and has taken a lot of trial and error :)
Smokie Link Casserole
1 can creamed corn
1 can cream of chicken soup
2 large baking potatoes peeled and cubed
1 package of smokey links
Cube potatoes and boil in water for 5 min then drain the water. Cut smokey links into small pieces about 3 or 4 pieces per smokie. Mix all of the ingredients together making sure to put the whole can of creamed corn and not to drain the juice, then bake at 350' for about an hour.
When we make this, I end up making a triple batch of the casserole and freezing half of it for dinner another night, we usually add a bread and fruit to our meal as well.
